It’s summer and what better way to cool off than with a refreshing cocktail. I am obsessed with kiwi – the color, the design/detail and of course the tart and sweet taste. I always joked a fruit cup or salad really isn’t one unless it has kiwi.
As part of my summer celebrations, I created this kiwi cocktail for the Kiwi Party (that coming soon)
Ingredients: For a pitcher – 1 cup of blueberries, 4 kiwis peeled and sliced, extra fruit – 2 kiwis (sliced) for garnish and handful of blueberries, 1 cup of rum, 1 cup of lemon/lime soda, 1/4 cup of sugar, 1/3 cup of lime juice
Recipe:
Step 1: Muddle (yes…get your arm workout on) cup of blueberries and peeled kiwis with lime juice and sugar – let it rest for about 2 minutes
Step 2: Pour rum juice into muddle mixture and mix it up – smells like a tropical island right?
Step 3: Move Rum Muddle Mixture to the bottom of a pitcher and add ice
Step 4: Add ice and pour lemon lime soda (or sparkling water for less sugar) over ice.
Step 5: Add slices of kiwi and whole blueberries for garnish
Step 6: Relax and enjoy!
Layered Kiwi Display
Cut your kiwi in thin slices.
Use water to create a suction to the inner rim of the glasses.
Add Ice to maintain the cool temperature
Pour drink mixture over ice and garnish with blueberries and mint.
