You know I love a good party (obviously) and the food definitely can make or break an event. It puts a smile on my face when guests hang around the food and can't help but continue to munch on the delicious food spread. Now since it's officially Fall on the calendar, this is the perfect excuse to have a fall festival or a fall inspired dinner with all your favorite comfort foods....and maybe a few more you can add to the list.
I had the pleasure of hosting some ladies for a welcome to fall party and I had to incorporate my favorite decor element, a bar cart. This was the main way I displayed some of the appetizers and I was able to rotate the food throughout the party.
Now to the food...there were NO LEFTOVERS. The comfort fall food was a hit and trust me when I say that this will be your staple party appetizer whether you are hosting or pot-lucking.
Beef & Spinach Grilled Cheese, take a moment and let that sink in. Savory, buttery, beefy, cheesy...perfection. I was a stickler about the ingredients with this recipe because I wanted to make sure that each item blended well together.
The main ingredient for these were Laura's Lean Ground Beef patties. I was so impressed by Laura Freeman being a pioneer, paving the way in a male dominated industry with her focus and emphasis on "Never Ever" beef. "Never Ever" meaning the protein is sourced from suppliers that raise their cattle without ever using added hormones or antibiotics and are always vegetarian fed.
Laura's Lean is certified through the American Heart Association heart check program and meets USDA standards for Extra Lean.
Fair warning, you guests will take one slice to be nice but definitely come back and sneak another.
Ingredients:
1 lb Laura's Lean Ground Beef patties
1 Package of Cream Cheese (8 oz)
8 oz Italian blend shredded cheese - Parmesan, Romano & Mozzarella
1 tablespoon of Minced Garlic
1 tablespoon of chopped Onions
1/2 cup Sour Cream
1/2 cup Mayo
Pepper (to taste)
1 can Artichoke Hearts (drained)
1 cup of Spinach (frozen - chopped or fresh)
Preparation:
1. Brown your ground beef patties in skillet with onions (until translucent) & fresh garlic
2. Mix your cheeses (shredded and cream) with sour cream, mayo *pro tip - you can add additional seasoning like garlic powder (1 teaspoon) to this mixture to give it a strong flavor (highly suggested)
3. Add your artichoke & spinach to the mixture
4. Fold all ingredients together until thoroughly blended
5. "Flash bake" for 15-18 minutes in 350 degree oven to begin the melting process
6. Remove from oven and allow to rest for approximately 10 minutes.
7. Place sandwich bread slice on buttered side down on warm skillet and begin to layer - first cream bend then ground beef patty
8. Allow the mixture to melt as it heats and add the top sandwich slice
9. Before flipping add an additional sliver of butter to the pan
10. Cook for 3-4 minutes each side and remove when bread is golden brown or mixture begins to bubble at the sides.
11. Enjoy while hot!

Next recipe is Chipotle Beef Pinwheels. This has all the components of an addicting appetizer - flaky, buttery crust, seasoned beef & sweet & spicy sauce.
1 pack of Laura’s Lean beef patties
1 Puff Pastry Sheet
1 tbsp minced garlic
1/4 cup chopped onions
1 package of cream cheese
1 cup of Italian blend cheeses
1 tbsp of garlic butter spread
1 tbsp onion and garlic powder
1 Large egg
Pinch of parsley
Preparation:
Preheat oven to 375
Add your minced garlic, chopped onions, garlic and onion powder to ground beef.
Mix thoroughly to allow seasonings to spread throughout
Brown your ground beef mixture and begin to crumb the patties in the skillet
Remove beef from and mix in 1/2 cup of shredded cheese blend and cream cheese package
Beat egg and fold into ground beef mixture
Roll out puff pastry on a flour surface (I prefer a flour wax sheet)
Begin to spread beef mixture onto puff pastry leaving one inch at the edge
Sprinkle more cheese blend all over
Take the end that is closest to you and begin to roll the puff pastry away (creating a cylinder)
Make sure it is tight and refrigerate for at least minutes and slightly firm
Taking a sharp knife slice 1 inch pieces and place evenly on a greased pan
Melt your garlic butter spread and brush on the tops of your sliced puff pastry
Bake for 15 minutes, until golden brown and pastry has puffed
Remove and enjoy while warm
Honey Chipotle Dipping Sauce:
2/3 c. honey
1/4 c. water
1 tbsp. ketchup
1 tsp. chipotle powder
1 tbsp. apple cider vinegar or white vinegar
For additional heat & spice - 1 tsp. of hot sauce
Combine all ingredients in a saucepan over medium-high heat. Mix and whisk thoroughly and allow it to boil for 2 minutes. It should become more saucy. Remove from heat and allow to cool. Place in a ramekin, dip and enjoy!
